This is a wonderful dinner idea. Remember, “Breakfast like a king, Lunch like a prince, Dinner like a pauper.” Slice some cherry tomatoes in half, cut up some fresh basil, toss in some low-fat fresh mozzarella, and dress lightly with olive oil and balsamic vinegar. Viola! You have yourself a beautiful cherry tomato caprese salad! Protein, vitamins, good fat, and very few carbs!
